Commercial Sharpening
Since establishing Mr Sharp in May 2011, Joel has rapidly developed a loyal client base including many of Sydney's premier fine dining restaurants. Top chefs have come to rely on his professional service and entrust him exclusively with the care of their valuable equipment.
Mr Sharp's technique is cold stone, water-cooled sharpening. The angle of each knife is individually evaluated and polished to a mirror finish with leather honing. Knives that are damaged or have been incorrectly sharpened may be restored to a clean, workable edge.
Joel specialises in cold stone sharpening high performance knives including all European and Japanese knives, folded damascus, single beveled and serrated knives.
